Fruit custard is a delicious and refreshing dessert that combines the creaminess of custard with the sweetness and freshness of various fruits. Here’s a simple recipe to make fruit custard:
For the Custard:
2 cups of milk
3 tablespoons of custard powder (vanilla flavor)
4-5 tablespoons of sugar (adjust to taste)
For the Fruit Mix:
2 cups of mixed fruits (bananas, apples, grapes, pomegranate, and any other fruits of your choice)
1/2 cup of finely chopped mixed nuts (cashews, almonds, and pistachios)
Prepare the Custard:
Take 1/4 cup of milk and mix it with the custard powder in a small bowl to form a smooth paste, ensuring there are no lumps.
In a saucepan, heat the remaining milk and sugar over medium heat. Stir continuously to dissolve the sugar.
Once the milk comes to a gentle boil, reduce the heat to low and slowly pour the custard paste into the milk, stirring constantly to avoid lumps.
Continue to cook on low heat while stirring until the custard thickens. It should coat the back of a spoon. This should take about 5-7 minutes.
Once the custard is ready, remove it from the heat and let it cool. You can transfer it to a different bowl to speed up the cooling process. Make sure to cover the surface of the custard with plastic wrap to prevent a skin from forming.
Prepare the Fruits:
Wash and peel (if necessary) the fruits you’ve chosen. Dice them into bite-sized pieces and place them in a mixing bowl.
If you’re using fruits like apples or bananas that tend to brown, you can toss them in a little lemon juice to keep their color fresh.
Mix the Custard and Fruits:
Once the custard has cooled down, pour it over the mixed fruits.
Gently fold the custard into the fruits until they are well coated.
Sprinkle the finely chopped nuts over the fruit custard. These add a nice crunch and flavor to the dessert.
Chill and Serve:
Cover the fruit custard and refrigerate it for at least an hour before serving. It’s best when served chilled.
